Puding Pisang Raja

"Baked Malaysian-style Banana Pudding -- Puding Pisang Raja"

Puding Pusang Raja is a traditional Malaysian dessert using a local Banana called Pisang Raja.

This type of Bananas are easily available in South-East Asia.

It does not have an English name and I doubt it is imported out of these parts. In place of Pisang Raja, you can use any medium-sized Bananas available in your country.

Puding Recipe.

Ingredients.

5 medium-sized Bananas, enough to fill the base of a round casserole dish.

4 cups of coconut milk.

1 cup milk.

1 cup sugar.

6 eggs.

1 teaspoon vanilla essence or vanilla extract.

Preparation.

1. Slice the Bananas lengthwise in half.

2. Butter the base of the casserole dish, then arrange the Bananas on the base of the dish.

3. In a large bowl, mix the both the coconut milk and regular milk with the eggs and sugar. Beat until smooth.

4. Add the vanilla essence. Mix again.

5. Pour the mixture onto the Bananas and bake in a moderate oven for 30 minutes or until the top turns deep yellow/light brown.
