Super Easy Hummingbird Cake Recipe

This very traditional Cake is really easy to make and is scrumptious. It also tastes very tropical as it contains Bananas and Pineapples. It is topped with deliciously rich cream cheese frosting.

Hummingbird Cake

Ingredients

3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

2 cups sugar

1 teaspoon ground cinnamon

3 large eggs, beaten

1 cup vegetable oil

1 1/2 teaspoon vanilla extract/essence

1 can crushed pineapple, undrained

1 cup chopped pecans

2 cup chopped Bananas.

Cream Cheese Frosting.

Ingredients.

1. 1 (8-ounce) package cream cheese, at room temperature.

2. 1/2 cup butter, at room temperature

3. 2 cups icing sugar, sifted

4. 1 teaspoon vanilla essence.

Preparation.

Tip : Do not use a mixer for this recipe. It only requires stirring and combining the ingredients well.

1. In a large bowl, mix the flour, baking soda, salt, sugar and ground cinnamon until combined.

2. Then add eggs & oil. Stir until well combined and ingredients are moist.

3. Stir in vanilla, the crushed pineapple, 1 cup pecans & the Bananas.

4. Pour the batter into 3 well-oiled 9-inch round cakepans.

5. Bake at 350 Fahrenheit or approximately 180 Celsius for about 25 to 30 minutes or until a tooth pick inserted in the centre comes out clean.

7. Remove from oven. Cool the pans for 5 minutes on a rack. Then remove from pans, turn over on a wire rack. Leave until completely cool.

8. To prepare cream cheese frosting:- With an electric mixer, beat cream cheese and butter at medium speed until smooth. Reduce speed to low and gradually add the icing sugar, until light and fluffy. Stir in the vanilla essence.

9. Assemble the the first cake on a serving tray or plate. Spread the frosting on the top, place the 2nd cake on top of the 1st, spread more frosting. Repeat with the 3rd and spread the reminder on the tops and sides.

10. Sprinkle with the chopped pecans and refrigerate.
