Here's very simple and basic butter cake recipe.
Basic Butter Cake
Ingredients
125 grams butter
1 teaspoon vanilla essence
3/4 cup caster sugar
2 eggs
1 1/2 cups self-raising flour
1/2 cup milk.
Preparation
1. Cream butter, essence and sugar in a bowl with an electric mixer until light and fluffy.
2. Beat eggs one-by-one, until combined.
3. Stir in half the sifted flour and half the milk, then stir in remaining flour and milk.
4. Pour mixture into prepared pan into a 14cm by 21cm loaf pan for 1 hour.
Variations.
1. If you're using this for cupcake, line muffin trays with paper muffin cups.
2. Spoon the mixture into the paper cups until 2/3 full and bake for 15 minutes.
