Best Banana Pudding


"Sticky Date and Banana Pudding"



This is a delightful Best Banana Pudding recipe and with lovely texture due to it's main ingredients:- dates and bananas.

The original recipe was too sweet so I have reduced the amount of brown sugar to make it more palatable.

Sticky Date and Banana Pudding

Ingredients.

320 g chopped dates

1 cup boiling water

2 teaspoons bi-carbonate soda

100 g soft butter

260 g brown sugar

8 eggs

270g plain flour

1 teaspoon baking powder

400 g chopped Bananas, approximately 3 large Bananas

Caramel Sauce

300 ml cream (I prefer using whipping cream as it is smooth and light)

100 g butter

200 g brown sugar.

Preparation.

1. Preheat oven to 180 degree Celsius or 350 degree Fahrenheit. Grease a 24 cm cake tin.

2. Put dates into a bowl, pour boiling water to cover, sprinkle the bi-carbonate soda and set aside to cool.

3. Beat sugar and butter until light and well-combined. Add eggs one at a time while beating well. Make sure mixture is well-combined.

4. Fold in flour and baking powder, mix well. Add Bananas and dates.


Sticky Pudding Mixture ready for the oven.


5. Bake for 40 minutes until firm.


Sticky Dates and Banana Pudding ready to be enjoyed.
