Banana Yogurt Cupcakes


"Delicious Fruity Banana Yogurt Cupcakes Recipe"




This Banana Yogurt Cupcakes recipe is easy enough to make and doesn't require much effort or preparation time. Not only is it filled with Bananas, I also tend to add cherries or blueberries to give it for that fruity, tangy taste. Delicious and filled with good nutrients.

I've added it to the muffins page as well, as after all, cupcakes are somewhat like muffins.

Here's a picture of freshly made cupcakes that has not been dressed with icing yet.

Banana Yogurt Cupcakes Recipe

Ingredients

125g butter

225g caster sugar

1 tsp vanilla essence

2 large eggs, beaten lightly

80 ml natural yogurt

3 large bananas, peeled and mashed

300g self-raising flour

120 g cherries or blueberries, if fresh fruits are not available, used canned fruits

Preparation

1. Preheat oven at 180 degree Celsius.

2. Place butter, sugar and vanilla essence in a mixing bowl. Beat until light and creamy.

3. Add eggs one at a time and beat well.

4. Fold in yogurt and mashed bananas.

5. Fold in self-raising flour, then fruits.

6. Butter muffin trays. Spoon the batter into the muffin trays until half-filled.

7. Bake in oven for 20 minutes or until golden brown.

8. Allow to cool for about 5 minutes before turning on a wire rack.
