Wholewheat Banana Nut Loaf


"Healthy and Delicious--Perfect Combination"




There are many delicious Banana bread recipes and here's one of them -- Wholewheat Banana Nut Loaf.


Healthy Breakfast options need not taste cardboard-like or dry.


I usually eat with peanut butter or marmalade. After all, peanut butter goes well with Bananas.

Wholewheat Banana Nut Loaf.

Makes 1 loaf.

Ingredients.

4 oz (115g) butter, at room temperature

4 oz (115g) caster sugar

2 eggs, at room temperature

4 oz (115 g) plain flour

1 tsp soda bicarbonate

1/4 tsp salt

1 tsp ground cinnamon

2 oz (55g) wholewheat flour

3 large ripe Bananas

1 tsp vanilla essence

2 oz (55g) chopped walnuts.

PREPARATIONS.

1. Preheat a 350 Fahrenheit/180 Celsius/ Gas 4 Oven.

2. Grease a loaf tin well and set aside.

3. With an electric mixer, cream the butter and sugar together until light and fluffy.

4. Add the eggs, one at a time and beat well after each addition.

5. sift the plain flour, soda bicarbonate, salt and cinnamon over the butter mixture and stir to blend.

6. Once mixture is smooth, stir in the wholewheat flour.

7. Stir the mashed Bananas into the mixture, followed by the vanilla essence and nuts.

8. Pour the mixture into the prepared pan and spread evenly.

9. Bake until a skewer inserted comes out clean, about 50-60 minutes. Let stand for 15 minutes before transferring to a wire rack to cool completely.
