The Easiest Banana Muffins Recipe Ever.
Here's an extraordinarily simple Banana Muffins Recipe that can be made in an hour as afternoon snack for the kids or to entice friends to linger a little longer over coffee on a lazy Sunday afternoon. The recipe is also so simple that you can let your kids help you mix the ingredients together and make it a family activity. My love for baking was definitely a result of helping my mum in the kitchen from a very young age. I started out turning freshly-made donuts on to a plateful of sugar to coat it to baking my first cake in my earlier teen. :) Great fun!
Banana Muffins Recipe Ingredients 250g plain flour 1 teaspoon baking powder 1 teaspoon soda bicarbonate 1/4 teaspoon salt 1/2 teaspoon ground cinnamon 3 large ripe Bananas 1 egg 70g brown sugar 50 ml vegetable oil 30 g raisins
Preparations1. Preheat oven to 200 degree Celsius. Lightly grease or use paper cones to fill a muffin tray. The muffin tray should have about 10 muffin tins. 2. Sift together the flour, baking powder, soda bicarbonate, salt and cinnamon. Set aside. 3. Mash the Bananas in a large bowl. 4. Beat in the egg, sugar and oil. 5. Add all the dry ingredients and use an electric mixer to mix all the ingredients on slow speed. 6. Stir in the raisins. 7. Spoon the mixture into the prepared cups until two-thirds only. 8. Bake for 25 minutes and until the muffins spring back when lightly tapped. 9. Transfer to a rack to cool.
