Banana Ginger Tea Bread


"Surprisingly Simple and Pleasantly Delicious"




Slice this Banana Ginger Tea Bread and serve with your favourite spread...I like with smooth peanut butter...weird but oh-so-good!

Banana Ginger Tea Bread.

Ingredients.

Makes 1 Loaf.

6 oz (175 g) self-raising flour

1 teaspoon (5 ml) baking powder

1 and 1/2 oz (40 g) softened butter

2 oz (50 g) dark muscovado sugar, if unavailable, substitute with brown sugar

2 oz (50 g) drained stem ginger, chopped

4 tablespoon (60 ml) skimmed milk

2 over ripe Bananas, mashed

Preparation.

1. Preheat oven to 180 degree Celsius/350 degree Fahrenheit. Grease and line a loaf tin -- 1 lb (450g) tin.

2. Sift flour and baking powder into a mixing bowl.

3. Rub in the softened butter until mixture resembles breadcrumbs.

4. Stir in sugar. Add ginger, milk and mashed Bananas and mix well.

5. Pour gently into the prepared greased loaf tin and bake for 40- 45 minutes or until an inserted skewer or tooth pick comes out clean.

6. Remove from oven, gently loosen the sides and turn over onto a wire rack. Leave to cool completely.
