Banana Ginger Cake.


"Delicious Spiced Cake Recipe"




I tried this delicious Banana Ginger Cake recipe once and it turned out really well.

I got it from an old recipe book called "Hot and Spicy-Red, Hot and Sizzling Dishes" but I've improvised the recipe slightly.

This cake is healthy, nutritious and its a great to have before a game or packed in lunch boxes.

Banana Ginger Cake

Ingredients.

200g/7oz/1 2/3 cups plain flour

10 ml/2 tsp soda bicarbonate

10 ml/2 tsp ground ginger

150 g/5 oz/ 1 1/4 cups oatmeal/oat bran

60 ml/ 4 tbsp brown sugar

75 g/ 3 oz/ 6 tbsp butter

150 g/ 5 oz/ 3/4 cup golden syrup/maple syrup

1 egg, beaten

3 ripe bananas, mashed

75 g/3 oz/ 3/4 cup icing sugar

Preparation.

1. Preheat oven to 160 degree Celsius, 325 degree Fahrenheit/ Gas 3.

2. Grease and line an 18 X 28cm/ 7 X 11 inch cake tin.

3. Sift the flour, bicarbonate and ginger into a mixing bowl. Then stir in the oatmeal or oat bran until combined.

4. Mix the sugar, butter and golden syrup on a saucepan over low fire until melted and combined.

5. Stir the liquid mixture with the flour mixture. Mix egg and mashed bananas until combined and smooth.

6. Spoon into the tin and bake for an hour or until firm to the touch.

7. When cool, cut into squares. Sift icing sugar into a bowl, stir in enough water to make a smooth, runny icing. Use a piping bag to drizzle the icing over the slices of cake.
