Banana Cupcakes Ingredients for the cupcakes 230 g (8 oz) unsalted butter, softened 230 g (8 oz) self-raising flour 225 g (8 oz) caster sugar 4 medium eggs 1/2 tsp cinnamon 230 (8 oz) mashed ripe bananas For the topping 3 tbsp granulated sugar 1 tsp cinnamon 2 tbsp softened unsalted butter 6 tbsp porridge oats 2 tbsp flour.

Preparation
1. Preheat oven to 175 degree Celsius/250 degree Fahrenheit/Gas mark 4.
2. Combine butter, sugar, flour, eggs and cinnamon in large bowl and beat with electric hand whisk/mixer until smooth. This should take about 3 minutes.
3. With a large spoon, stir in mashed bananas until well combined.
4. Spoon batter into baking cases placed in muffin tins.
5. Put all topping ingredients into a bowl, mix until well combined.
6. Sprinkle a little over the cupcakes before baking.
7. Bake for approximately 20 minutes.
8. Remove from oven and let cool for 5 minutes before placing on a rack.
