Banana Cake

Some days I feel lazy and not in the mood to bake elaborate cakes with massive amounts of fancy ingredients...just using stuff I can find my larder and fridge.
This is a very simple "Malaysian-style" cake recipe. One of those you can purchase at cake shops, stalls and restaurants but without all the preservatives.
Simple and Delicious! Banana Cake. Ingredients. Makes 1 Loaf. 125 g (4 oz) plain flour 1 egg 1/2 teaspoon baking powder 1/2 teaspoon soda bicarbonate 90g (3 oz) castor sugar 75 g butter 1 tablespoon milk 1 tablespoon lime juice 3-4 ripe medium sized Bananas
Preparation. 1. Preheat a 350 degree F/180 degree C/Gas 4 oven. Grease a loaf tin. 2. Sift flour, baking powder, soda bicarbonate. 3. In another bowl, combine butter with sugar. Beat until the mixture is light and fluffy. 4. Add the well beaten egg. 5. In a separate bowl, mash the Bananas. Add the lime juice into the milk. 6. Add the mashed Bananas and lime and milk mixture into the butter mixture. Mix well. 7. Add the flours and mix well. Pour the batter into the prepared loaf tin. 8. Bake for 40-60 minutes or until a wooden skewer inserted in the centre comes out clean. 9. Cool the pan for 5 minutes on a rack, then turn over an wire rack. Leave until completely cool.
