Easy and Healthy Banana Almond Muffins.

Here's a healthy and simple variation of the previous Muffin Recipe....Banana Almond Muffins.

It's got fruits and nuts thrown in! Great and delicious way to load up on the right nutrients. :)

Banana Almond Muffin Recipe

Ingredients

150g plain flour

1 1/2 teaspoon baking powder

60g butter, left at room temperature

150g caster sugar

1 egg

1 teaspoon vanilla essence

3 medium bananas, mashed in a bowl

55 g chopped almonds

5 tablespoons milk

Banana Almond Muffin Preparation

1. Preheat oven to 190 degree Celsius.

2. Sift the flour and baking powder into a bowl. Set aside.

3. Use a mixer to cream the butter and sugar together until light and fluffy.

4. Add the essence and egg and beat until fluffy and smooth.

5. Add the mashed bananas.

6. Add the chopped almonds. Slowly add the flour mixture alternating with the milk into the bowl while using the mixer. on very low speed.

7. Spoon the mixture into muffin cups in a tray that has been slightly oiled until 2/3. Bake until golden brown for about 20-25 minutes. The muffin should bounce back when lightly touched to determine its readiness.

8. Allow to cool for about 5 minutes before turning on a wire rack.

Tip: When adding the flour mixture and milk into the bowl, set the mixer on very low speed. This is to ensure the flour doesnt fly all over the place and mess up your counter top!

Variation: You can substitute the almonds with walnuts.
