Easy Chocolate Chip Muffins
"Easy, Chocolate-y and Bananalicious"
Here's a delightfully simple Chocolate Chip Muffins Recipe. Again, I use brown sugar in this recipe as it goes exceptionally well with Bananas. Brings out the fruit's rich sweetness.
Chocolate Chip Muffins Recipe. Ingredients
115g butter 70 g caster sugar 30 g brown sugar 2 eggs, room temperature 3 large ripe bananas, mashed. 215 g plain flour 1 teaspoon baking powder 125 ml milk 180 g chocolate chips
Preparation. 1. Preheat oven to 200 degree Celsius. Lightly grease or use paper cones to fill a muffin tray. The muffin tray should have about 10 muffin tins. 2. Using an electric mixer, cream the butter until soft and light. Add the sugars and beat until light and fluffy. Add eggs one at a time, beating until combined each time.
Mixing the batter 3. Sift the flour and baking powder. Fold into the butter mixture, alternating the milk. Add the mashed Bananas. Mix until all ingredients are well combined.

Spooning the batter into the muffin cups. 4. Spoon the batter into the muffin cups until almost half full. Sprinkle about 8 to 10 chocolate chips onto the half-filled cups. Top it up with a spoonful of batter.

First batch-ready for the oven 5. Bake for approximately 25 minutes until the muffins are a very light brown. Take out of the oven and let the muffins cool for about 10 minutes before turning out on a wire rack.

Yummy Freshly-Baked Muffins! Serve with white coffee or tea.
