Banana Crumble Cake

This a wonderful Banana Crumble Cake Recipe has lots of flavor between layers of crumble, cake, bananas. It also has different textures that delight when you bite into the cake...crunchy crumble, moist fruity bananas and yummy cake! Banana Crumble Cake Ingredients. For Cake 6 large bananas (sliced) 1 tsp ground cinnamon 250g / 1 cup butter 250g / 1 1/4 caster sugar or granulated fine sugar 4 eggs 200 ml semi-skimmed milk 450g / 4 cups self-raising flour. For Banana Crumble Topping 175g / 3/4 cup brown sugar 125g / 1 1/4 cups plain flour 1 tsp ground cinnamon 65g / 4 1/2 tbsp dessicated coconut 115g / 1/2 cup butter. Here's the Banana Crumble Cake all ready to be baked.

Preparation.1. Preheat oven until 180 degree Celsius/350 degree Fahrenheit. 2. Put all the ingredients for the crumble topping in a bowl. With your fingers rub the butter with the rest of the crumble ingredients until combined and set aside. 3. Cream the butter and sugar in a separate bowl with a hand mixer until light and fluffy. Beat in eggs one-by-one until combined. 4. Sift in half the flour and 1/2 tsp of cinnamon, then mix well to combine. Add the remaining flour and stir. Gently pour the semi-skimmed milk, stir until smooth. 5. Spread half of the cake mixture on a greased 25cm/10 inch cake pan, Arrange half of the bananas on top and spoon half of the crumble mix on top. 6. Spoon and spread the rest of the cake mixture on top of the crumble, followed by the bananas and crumble. 7. Bake for between 1 hour 5 minutes to 1 hour 20 minutes. Check half way through. I cover the pan with aluminium /tin foil after half and hour so that the crumble topping does not brown too quickly. 8. Once the cake is cooked through, take it out of the oven, let it cool and turn over on a wire rack. 9. Serve warm with vanilla ice-cream. Here's the freshly-baked Banana Crumble Cake.
