"Yet another delicious Pie Recipe that masquerades as a Cheese Cake"

A delightful Banana Creme Pie recipe that can also be called a Banana Cheese Cake.

It's different and really light!

Banana Creme Pie

Ingredients.

200 g or 7 oz ginger biscuits, crushed

70 g or 2 and 1/2 oz butter, melted

1/2 teaspoon ground cinnamon or grated nutmeg

180g or approximately 6 oz ripe bananas, mashed

350 g or 12 oz cream cheese, at room temperature

65 ml or 2 fl oz plain yogurt or sour cream

1 teaspoon vanilla essence.

TOPPING

250 ml or 8 fl oz whipping cream

3-4 bananas

Preparation.

1. Combine crushed ginger biscuits, butter and spice in a bowl. Mix thoroughly with a wooden spoon or your fingers.

2. Press the mixture into a pie dish or round tin with spoon ensuring the sides are neat and thick. Bake for approximately 5 minutes and leave out to cool.

3. By using an electric mixer, beat the mashed bananas with the cream cheese.

4. Fold in the yogurt or cream and the vanilla essence. Spread the filling in the biscuit base.

5. Refrigerate overnight.

6. To make the topping, whip the cream until soft peaks appear, then spread on the pie filling. Take two bananas, slice them and arrange in a circle on top of the banana cream pie.
