Nutty Banana Bake
"Delectable Spiced Banana Bake with Cinnamon and Nutmeg"
This delicious and low-calorie Banana recipe uses Bananas (of course!), nuts and spices.
You can make it to complement dinner on a weekday or serve at dinner parties when the main course is heavy and rich.
This recipe was obtained from an old recipe book called "Hot and Spicy- Red Hot and Sizzling Dishes".
Spiced Nutty Banana Bake.
Ingredients. 6 ripe but firm bananas
30 ml/2 tbsp unsalted cashew nuts/roasted almonds
30 ml/2 tbsp chopped unsalted peanuts
30 ml/ 2 tbsp dessicated coconut
7.5-15 ml/ 1 tbsp demerara sugar or brown sugar
5 ml/ 1 tsp freshly grated nutmeg
150 ml/ 1/4 pint/ 2/3 cup orange juice
60 ml/ 4 tbsp rum (optional)
15 g/ 1/2 oz/ 1 tbsp butter
double cream, to serve.
Ingredients.
1.Preheat oven to 200 degree Celsius/ 400 degree Fahrenheit/ Gas 6. Slice the bananas and place in a greased, shallow ovenproof dish.
2. Mix together the cashew nuts or almonds, peanuts, coconut, sugar,cinnamon and nutmeg in a small bowl.
3. Pour orange juice and rum (if using) over the bananas, then sprinkle with the nut mixture.
4. Drop tiny dots of butter on the top of the mixture and bake for 15-20 minutes or until the bananas are golden and the sauce is bubbly.
5. Serve with double cream.
Tips.
To roast the almonds, simply dry roast in a pan or wok. Do not add any liquid or oil. Keep stirring constantly for about 5 minutes until the almonds change colour and emits a wonderful roasting aroma.
